Join me for a spooktacular open house this weekend! The ghoulish fun starts on Thursday 2-8 with $5 ATC night 6-8. Friday 12-6 and Saturday 12-4 there will be an open house where you can tour my new studio space and see what Molly and I have been making. The kid painted a pumpkin and it bears a striking resemblance to Lady Gaga...you have got to see it. So be there or be square!
I will be having open houses about 8 times a year so all of my local friends can shop! The next open house will be a Holiday Open House the first weekend of December so mark your calendars now. Chicken Mango mmmmm.
Realized when I was grocery shopping this morning that I forgot to eat breakfast. Hate it when that happens. Everything looked sooooo good. I remembered I had some grilled chicken at home right when I was passing the mango's. I have not really embraced my love of mango's until a few months ago when I whipped up some mango salsa but now I am a little addicted. Here is how I made this totally delicious salad which I managed to polish off just a little bit ago.
Dice one mango, part of a green pepper, part of a red onion, and half of an avocado. I would have added a little cilantro maybe a tomato or a jalapeno but I didn't have any. Mixed that up and then added a splash of olive oil and a splash of vinegar. A little salt and pepper to taste and then tossed in some diced heated up chicken breast. Tossed it together well and poured it over some fresh romaine with a sprinkle of Parmesan and a few tortilla chips. Seriously yummy. Go try it now!!!
